Wellington's local land agent, Arthur William "Bink" Glisson, ran the Flying Cow Ranch on the ground and became the Acme Drainage District's first general manager, overseeing the canal network that kept the fields dry enough to farm. The reclaimed muck proved astonishingly fertile: citrus groves and vegetable fields spread across the old wetland, and the strawberry acreage grew until the ranch could claim the largest patch in the world. It was engineered agriculture on the grandest scale — a checkerboard of canals, pumps, and berms holding the Everglades at arm's length.
